THE WINEMAKER: Founded in 2001 by Roberto Maestri and his family, Quarticello is located in the famous food & wine region of Emilia-Romagna. The vineyard sits on sandy-clay soil and the family grows traditional grapes for the region, particularly Lambrusco and Malvasia. Roberto uses only stainless steel tanks for fermentation to keep the flavors as unmodified as possible. Le Mole spends 12 months in tank after a 5 day maceration period, using 30% overripe grapes to give it something extra.
