THE WINEMAKER: AT Roca is at the forefront of revolution when it comes to Cava production in Spain. 75% of Cava production is helmed by two big wineries that control the Cava DO. This DO is unique because it is not a geographic domain, but a requirement that sparkling wine must be made in the traditional method. AT Roca and other Catalan producers have broken off and created the DO "Classic Penedés" to emphasize the unique terroir of the region, and is the only governing body that requires members to be organic certified. Augustì Torello Roman, his father, and his aunt are members and have been producers of Cava for three generations, determined to make Cava the natural way. They use indigenous yeast and harvest 100% by hand, which is rare in Penedés. They ferment in barrel and age on the lees with natural cork, also rare for the region! Dedicated to their craft, they are turning out truly superior Cava.
