THE WINEMAKER: Jacques Perritaz is the mastermind behind Cidrerie du Vulcan, located in Fribourg, Switzerland. We had the honor of meeting this lovely man at a recent wine fair and his ciders completely blew us away. He is certified organic and only works with ancient and rare Swiss apple varieties. His orchards are all untreated and dry-farmed and some of his trees are up to 200 years old.
