THE WINEMAKER: Croatian winemaking is intrinsically tied to the Ancient Greek traditions of the region. Croatia's limestone soil and seafood heavy diet are particularly suited for white and orange wine production. Though winemaking in the region was stalled during the revolutions of the 90's, it has since become a beautiful practice of reclaiming history while embracing contemporary beliefs. Cultivating this new style of Croatian wines is Giorgio Clai and his family. Located in Istria, a border town, Clai is dedicated to small yields and doing everything in congruence with nature. This wine is aged 2 years in oak barrels. He also grows olive trees. No additions ever added.
