THE WINEMAKER: Originally from the Loire, Cyril Fhal of Clos du Rouge Gorge made his way to the Roussillon and found a plot of hilly land that had only ever been biodynamically farmed. He continued this way using horses and the nature around him to coax grapes of incredible flavor. He refused the appellation requirements that would have forced him to plant non-native varietals. His wines are truly brilliant, and in wine circles around the world, Clos du Rouge Gorge is spoken about in hushed and revered tones. Many of those original wines are meant to be drank after a great age, so Fhal partnered with Alice Gendron to produce Hors Champs, a wine expertly created but meant to be drunk young, allowing the magic of Cyril Fhal to reach a wider audience.
